fresh bread and morning sun

i baked this bread in the weekend. i do that quite often, because, well, it's the best bread ever. so simple, so good. it's baked in an iron cast pot, which makes the crust to die for. this time around i used 2/3 wheat flour and 1/3 whole wheat flour. i added some quinoa and oats as well as dried dates.

just out of the oven it is so hot you can hear the crust cracking as it adjusts to the cold. you can even see it changing a tiny bit in the structure. i love to watch and listen. this particular morning it was extra pretty, as the early morning sun was shining through the window. the kids were still snuggling up in bed with D, leaving me alone in the quiet kitchen with a cup of coffee in my hand. standing there, surrounded by golden morning light and the scent of freshly baked bread mixing with the smell of my coffee, i felt content.

  3. pien, an iron cast pot (also called a dutch oben by the way:) is one of those heavy, thick iron pots for example from le creuset. ikea have some too in great blue and orange/red colors. you might also be able to find them in thrift stores, these big, black heavy soup pots. in the link in my post you can see one of mine. a red, oval shaped one.

it's perfect for slow cooking and soups on the stove too. good luck :)

  6. I love bread, this post made me hungry. And your Sunday morning baking ritual sounds so wonderful, I wish I could do that.

Great photo! It looks like the flame is coming out of this loaf or as if it has a big burning heart.

  7. What a poetic morning, and what poetic post. I wish I could find poetry in baking too. You describe it so well, all the details. The sound of freshly baked bread. lovely post, Trinsch. Perhaps I should do my baking in the morning, instead of waiting until the afternoon:)
PS Just noticed your reply above, I bought a beautiful orange cast iron skillet at ikea, and didn't really take notice of the fact that it had a wooden handle until I got home, 150 kms away!

  9. I would love to pop on over for a cup of warm tea or coffee to help break a piece of your bread. It looks so wonderful and a perfect way to begin a day!

T- You would love my friends potting shed. It is so neat inside, it has a comfy chair and a very old small vintage sink she found on the roadside It doesn't work, but look so neat. The tin roof is from an old barn on a farm she grew up on. I'll see how much she will let me share. I bet the boys would love to spend a day at her home. There are lots of land to discover, horses, and goats. xo
